Whisky is correct, whiskey is incorrect.

In your example NoMercy both spellings of whisky are correct.

Without the " e" is the Scottish drink and with the "e" is the Irish drink.

NoM, I am appalled at what you have written as No. 1 - both are right - you haven't defined the adjective, as there are differences.
