You can eat anything with them. I'd grill them or cook them in a griddle pan.
Lucky you. I love them.
stir fry. With rice. Paella, risotto. Cold in salad.
Huge prawns. I could eat some of them right now enjoy.

but they have eyes and the shell on
Yes, cook them in the shell and peel when cooked.
Unless your langoustine are live, they should already have been cooked when caught.
Don't forget to remove the intestine (a black line down the underside) when you peel them.
Not in my experience. They are sold raw.
Most French supermarkets sell them both ways.
chips
When I've bought them it usually has 'this product is raw' on the pack as, unlike prawns/lobster etc, they are pink when raw and cooked.
They are very nice rolled in a mixture of breadcrumbs, desiccated coconut, zest of lime and just a little flour then deep fried just enough to make the crumb crisp and golden.
Serve with dips of sweet chili and curry mayo.
Now I'm hungry....
Shells are a bit sharp though :-)

not coconut, that's just wrong.
doesn't sound wrong to me woof, sounds yummy, feeling hungry now. X
you can shell them before cooking then cook in butter with garlic a little chilli and lemon and serve with rice and a nice salad yum yum can i come i will even cook them for you.
I agree with brinjal......but don't forget to remove the G,I tract first (imtestines).
Take the heads off, peel them, de-vein them, fry some olive oil, garlic and chilli, fry the langoustines, add a splash of white wine and toss through spaghetti
