It is a strong tasting meat if it's wild boar, not so much so if it's been reared. Try cooking it in white wine rather than red as red seems to change the flavour too much.
There must be quite a lot running about in North Devon because some animal rights idiots broke into a wild boar farm and set the animals free. They didn`t catch them all so I suppose they will breed in the wild. They`re vicious little things as well. They used to make my horse bolt when I was trail riding in Europe (horses hate pigs)
