Cauliflower In Chilli Sauce

Since I have a surplus of both these veg I wonder if I do roast cauliflower and make some chilli sauce could I put them in jars together as a sort of hot pickle? do you think it would work?

You know that chilies freeze very well. In fact they are easier to deseed and chop when frozen.
I'm not convinced by the trout of roasting and then canning.

What about making a spiced allotment pickle using onions, late courgettes/marrow etc or piccalilli with chilli?

If you are keen to go down the Indian route I'll have a little look to see if I have something suitable.

Thanks both of you, I have already made a double batch of piccalilli and already put lots in the freezer, so a pickle is all I can think of now, maybe I will have to do pickled cauliflower and just dry the chillis for flakes, should have enough last several years at least.
