does anyone know why a mixture of blueberries, strawberry yoghurt and milk when mixed together very quickly turns to a gel like substance and resembles a mozarella ball?

the acid in the blueberries "turning" the milk and the thickener in the yoghurt catching the clumps of turned milk?

Yes, I thought maybe it was pectin in the fruit turning it so we are both of a similar opinion. Strange thing though .... Many thanks
