Pickled Egg Question

I pickled some eggs a couple of months ago but when my oh cut one open it was soft in the middle, I obviously did not boil them long enough to start with, oh ate it anyway and I have been watching him ever since expecting him to double over with belly ache, he hasn't yet, has he been lucky (he has got strong guts and can eat nearly every thing) or do you think these eggs are really fit to eat?

I also used to sell 90 Gallons ( yes 90 gallons) of beer every Saturday between 4pm and 11pm , some days there were 7 of us behind the bar to keep up with sales, happy days!

wow, I never expected that lot, but oh is still ok and its nice to know I don't have to throw the rest of the pickled eggs away, I only picked them because they were given to me and didn't know what else to do with them, he liked it with a bit of salad and ham, thanks for all your input.
