Marmalade - Don`t Know What To Do

I decided to make some lemon and lime marmalade when I saw some lovely produce in the market yesterday. I`m using Delia`s recipe which is virtually the same as her orange one. I spent ages getting the wax off the lemons only to find that she recommends thin skinned lemons. I wouldn`t call mine thin skinned. They look like the Cypriot ones which have thick, uneven skins. So I don`t know whether to go off to Sainsburys to buy unwaxed, thin skinned lemons, risk using the ones I`ve got and having tough lemon rind or giving up and making just lime marmalade. I have never eaten lime marmalade - is it really sharp and an acquired taste?

I'd risk it.
Lime is one of my favourites, doesn't taste sharp to me, but then again I like pink grapefruit marmalade the best, so perhaps I'm immune to the sharpness.
Lime marmalade isn't sharp and go with the lemons you have, I think marmalade should have a bit of texture to it with peeley bits otherwise it tastes like that bland shop bought stuff. I'm sure it'll be lovely.

OK - thanks for the replies. I think I`ll risk it with the lemons I`ve got and see if I can cut the skin really, really thin.

Well, it looks like the thickness of the lemon skin doesn`t make any difference after all.
Just go with it, I made that recipe the other day - mine is a bit runny but if I did it again, I'd make sure that the peel was really really fine.

Boxtops - it hasn`t finished and I was just thinking that it looks a bit runny but I can`t really tell until it cools down.
I made it with lemons and limes and it's delicious - but the lime rinds are not quite soft enough. I think they must take longer to cook than lemon rinds. Next time i do it I will cook them for longer before making the actual marmalade
Lime marmalade is soooo much nicer than orange. Make some and send me a sample !

Well, I`ve just tried it and I don`t like it very much. The lemon skins were fine but as mentioned, the lime skins are quite tough. I also think I might have boiled it for too long as it`s quite thick. Maybe that`s because lemons have a lot of pectin though. It`s OK but I think I probably just don`t like lemon and lime marmalade. I might try to palm it off on the neighbours.
