What can i do with my smoked haddock tonight?

Hi there,

My friend has given me a lovely looking slice of smoked haddock - but i dnt know what to cook with it?

I plan on steaming it - is there any good sacues someone can reccomend? I would like to bread it, but im steaming it and dont think that is possible?!?!

Take it out to a show, then a romantic meal!!........or go on BBC website, go to the food section and there's loads of recipes. Funnily enough they were just cooking smoked haddock on Ready Steady Cook :-)
I was going to point you in the direction of some of the recipes from the BBC website but there are so many I wouldn't know where to start!

My favourite breakfast of all time (and I've been eating this for 40 years) is finney haddock with two slices of fresh crusty bread and butter. Sometimes with mushy peas.

Food doesn't have to be exotic sounding to be delicious, and think of this,fish is high in protein and contains no fat and bread truly is the staff of life.

It doesn't get any better.

an easy sauce is a parsley sauce



make a roux of flour and butter, add some cream or milk til it is the consistencey you want and add chopped fresh parsley, salt and pepper.

Do what I did tonight!


Lightly poach it in a little milk and serve with mashed potato in butter and peas ( I know I'm being a heathen but processd peas are best)


......or better still make a Kedgeree Hmmmm

Why not try baking it instead ?? Lay the fish skin side down on a buttered dish, place sliced tomato on top of fish. sprinkle liberally with white bread crumbs (you could add some chopped parsley to the crumbs), drizzle (sorry to use that word) generously with olive oil and bake for about 10 minutes in a hot oven. Like all fish dishes, do not overcook. Being smoked, the fish has a strongish flavour anyway so a flavoured olive oil is okay. P.S. It's best to use a natural smoked fish but hey, I'm not looking !!
How about making kedgeree? Steam it first then mix with cooked rice, sliced hardboiled eggs and curry powder - yummy!
Pop smoked haddock in the micro for approx 3 mins on high (1 fair size piece). Serve with mashed potato/peas or broad beans and a cheese sauce. Homemade sauce if you're not pushed for time. Granules or packet if you've had a busy day. Ed

Learned this in the Army, of all places!



First, poach an egg; two if you're feeling generous!


While the egg's cooking;


Place fish in a Pyrex casserole, with lid on. Add a knob of butter. Microwave for 1 minute. Baste fish with melted butter. Microwave for 1 minute.



Your eggs will now be cooked to perfection. Serve with the fish, with crusty bread and butter.
