In the varies menus in windows, word etc. my computer has a habit of only showing the ten or so most recently used options. i.e. in start-programs it will only show ten out of the fifty or so bits of stuff i have on there. How can i persuade it that this irritates me beyond words and that i ALWAYS want to see ALL of the options?

Right click on the taskbar at the bottom (usually) of the screen and select 'properties'. Untick 'Use Personalized Menus'. In Word go to 'Tools' - 'Customize' - 'Options'. Untick 'Menus show recently used commands first'. I found this extremely annoying too, and it took me ages to figure out how to stop it.
