since the software update on my 10.1 tab I have lost the screenshot icon on the menu bar, is there a way to get it back as I found it useful in the past.

This works on the 7": press and hold the Power and Volume Down buttons at the same time. A white border/outline will briefly appear on the screen and you will receive a notification informing you that a screenshot has been captured.
