Vegetarian Meals

I have four friends coming to stay next weekend two of whom are vegetarians. Has anyone any ideas what I could make I don't really want to make two different meals in case it makes them feel uncomfortable. Thanks.

A nice pesto pasta with loads of fresh parmesan, crusty bread and a good side salad.
You could make like a 'sunday' dinner and have the meat served seperately. Or like I do when I have vegetarians in the family here for holidays make two meals one with meat and one without. For example; two quiches. The vegetarians have only one option whereas the others have a choice.
Look at the links at the bottom of this thread and you'd find lots of ideas and helpful replies.
Or butternut squash risotto. You could make it seasonal and do it with pumpkin
Squash tagine or Thai red curry with squash.

A selection of different Indian dishes, one meat, couple of veg and a dhal with rice and chutneys.

Jamie Oliver has an easy to do but impressive looking pasta bake, Google 'Jamie Oliver Rotolo'.
Mushroom stroganoff is as delicious as the meat version, and you hardly notice there's no meat in it. Or you could have a few strips of steak on the side to add for the carnivores.
