Gites are more affordable the time of year you're travelling, but they are intended for longer lets so tend to have no guarantee of local catering.
This route from France towards spain is dotted with 'formule 1' type budget hotels which do the job of somewhere cheap and clean to sleep. They are usually in retail / business parks on the edge of towns.
'Etap' is another cheapo french chain hotel - Campanile was the origin of the marque but is now quite posh in comparison to an etap.
I agree with Mosaic, a gite is usually let out for a week minimum and they are usually family size with would be far too expensive for a couple. Next up from Formula 1 hotels and in similar locations are Etaphotels which are a bit more expensive, but not much and more likely to have vacancies as the immigrant workers tend to go for the F1s. A cheaper option than either of the above are 'gite d'etap', these are a bit like youth hostels but privately owned and may have male/female/mixed dormitories and meals available. The F1/Etaphotel do breakfasts but pedestrian access to town centre restaurants is sometimes a bit of a hike.. Alistair Sawday does a good book listing B&Bs in France. If you get into northern Spain, the Hotel Risco just off the motorway on the N634 into Laredo is very good with an excellent restaurant secure parking and a panoramic view over the town and the sea( I once stopped here on bike trip tp Portugal, and a car trip to Santiago de Compostella).
You can book most hotels on line, certainly Etaphotels .
