Got given a load of veg today, Carrots, Beetroot, Lettuce and Raddishes
What a good recipe for each of the above?

Salad?

Grate the carrot and beetroot, raw. Slice the radishes and mix altogether with the lettuce. Have as a delicious, colourful side salad with a dash of French Dressing.
Carrots...loads of recipes...

Grate them into a bowl, heat a TBS or so of sunflower oil add some mustard seeds when they begin to pop pour over the carrot add the juice of half a lemon and some sea salt.

Loads of recipes fro Moroccan carrot salads.....

Beetroot...scrub clean bake in the oven with 1cm water for 45mins or until tender.

Slip off the skins, cut into wedges serve with salad leaves walnuts, orange segments, feta cheese and a dressing of olive oil, walnut oil, orange juie, balsamic vinegar and a touch of paprika and garlic.

Radishes are nice with cubes of cheese, dijon mustard for dipping and cornichon as a nibble with beer before supper.

Not exactly a recipe, but I'll admit being short of teeth! Lettuce can be difficult to eat so I give it a quick whizz with water in a blender goblet then pour it out into a strainer. Other salad items are OK grated or chopped.
