I was explaining to the son yesterday that when preparing lettuce you should always tear it rather than using a knife to cut it, & he quite reasonably asked why. Now my Mum taught me this so many years ago that when faced with the question I couldn't actually remember other than it having something to do with a better taste

Can anyone remind me please

I think it has something to do with exposure to air oxidising the leaves and causing them to change colour.
That's true, and easily demonstrated.
What if you want the lettuce shredded ?

you do it right at the last minute before serving then it doesn't have time to go brown.
I bought a green plastic lettuce knife from tescos. Its made especially to prevent this from happening. It works very well and was inexpensive.
