I want to do a baked ham..

.the one with diamonds scored into the fat with cloves studded in it.
Which cut should I buy...I want a nice sweet hammy flavour...not salty.?

a gammon joint is your best bet for this . green if you like traditonal. we glaze it for the last half hour of cooking with honey and brown sugar.i am a master butcher in a farm shop. we also soak gammon over night in cold water as baking can intensify the salt flavour.enjoy!!
Definitely soak overnight first - and then I usually boil for an hour first, score the diamonds and coat in honey (I don't use cloves, except at Christmas) And ALWAYS serve with dauphinoise potatoes as the hint of cheese (paremesan on top) goes extremely well with it.
I go with echo. I also boil first. If you are worried about saltiness you can add a drop of vinegar to the boiling water.
I would choose an non-smoked ham for this. Soaking overnight will reduce
the saltiness somewhat but don't expect to get rid of the salt entirely. Afterall, that is how pork is converted into ham !

I normally simmer gently for an hour or so, then roast in the oven.

I coat it with a mixture of honey, marmalade and orange zest !

Wrap it in tin foil but take the foil off for the last half hour. If you have any of the marinade left, then spread it over the joint again. It should then form a really tasty covering.

I have an abhorance of cloves, having bitten into a whole one as a kid, while eating an Auntys apple pie, so I never use them !

I now have great advice...yum!
I boil it in ginger ale .......... did this at Christmas and was delicious! Think its the Nigella way .......
Boil first then glaze and cook in oven....
