I covered my Christmas cake in marzipan last week. I usually leave it to dry out a little before icing, but this year instead of drying, the marzipan got wetter! Yesterday I had to scrape it off...it was a horrid sloppy mess. Am a bit wary of trying again. Any ideas what happened anybody? Room too warm...too cold....too humid?
Thanks.

Definitely to do with temperature.
I'd say that your cake may've been too moist.

It is quite moist Madama. Any way I can rectify it so I can get the marzipan and icing done or is it a lost cause do you think?
My cake is very moist, I have never had this happen. It may be worth leaving the cake in a warm room unwrapped for a couple of hours before marzipanning. What did you use to stick it on? I find apricot jam or marmalade are best. It may seem like a stupid question but what did you cover the cake with after marzipanning? I find a clean tea towel works best. Good luck with the next try!!
Could also be to do with make of marzipan some can be very soft. Best to rub it over with icing sugar when on the cake and don't put in a tin for a day as the marzipan has to harden a little. Hope this helps, how annoying to have it happen when you go to all the trouble of making the cake etc.

Anngel, I used marmalade and didn't cover the cake with anything afterwards just left it on a plate in the dining room.
It was really annoying Daisya, I have bought some different marzipan to give it another go.
Thanks for your replies.
