I would've thought they threw giblets and bits away?
Have you tasted northern black turkey? How does this differ to your average bird?

Testicles aren't giblets. Testicles are sweetbread, a different part of the body entirely.

I'm afraid i've never made gravy from scratch and have always either used the meats sauces or instant gravy.
