Taken directly from the Help file for Word 2007:

Click the Microsoft Office Button, and then click Save As.
Click Tools, and then click General Options.
Do one or both of the following:
If you want reviewers to enter a password before they can view the document, type a password in the Password to open box.

I strongly advise you not to do this, as you may forget the password. When I used to do IT support, a department lost half a year's figures by forgetting the password to a Word document after insisting I was being paranoid!
SB, I love the way people expect a password on something like a word document to be secure, until they forget it, then they expect to be able to clear the password in a few seconds with two clicks of a mouse.
Precisely, not much point putting a password if you can clear it.

Microsoft always put loads of help in Windows and products like Word and I am always amazed when people ask basic questions like this when a quick search of the help would give them the answer.
