What happens if someone doesn't plea guilty or not guilty in court?...

My boyfriend's ex partner was in court 10 days ago for breaking a harrassment order against my bf and myself.
We have been told that the case has been adjourned to a later date because the ex wouldn't plea guilty or not guilty(and knowing her track record may have even caused a scene in court)
I was wondering what would happen at the next court date particularly if she was being uncooperative again. surely she would have to be dealt with regardless of a plea otherwise this would go for ages...

I think a plea of not guilty would be entered on their behalf.
