Sponge fingers

I bought too many sponge fingers when making tiramisu, and have loads left over. Apart from Tiramisu and trifle, what else could I make with them? Not keen on just eating them as they are and don't want to throw them out!

Make some more tiramisu and send it to me. I love tiramisu.
What about filling them with jam and cream. Whip the cream with a bit of icing sugar and teaspoon of vanilla essence.
are they the crispy ones, boudoire biscuits?
you could make some syllabub and stick them in that, that's what i use them for.
syllabub:
10 fl. oz double cream
1 lemon
3-4 oz sugar
4 fl. oz sherry or brandy or leave it out
whip cream. add juice and finely grated rind of lemon, sugar and booze, and whip again. put into individual dishes/glasses and chill overnight. serve with boudoire biscuits to dip in.

They're the soft ones that you soak in brandy/coffee mixture to make tiramisu. I think I'll pass them on to mum to use!
