Hi, I am from the UK but live in Greece. Does anybody have a recipe for pickling onions without using pickling spice. Here in Greece they sell only the small onions for pickling but you cannot buy jars of them. I really miss my pickled onions. Any recipes would be great. Thanks in advance.

Is there a recipe just using vinegar as one of the ingredients?
You could get someone to send you the dry spices so you can prepare the vinegar; or perhaps there may be an on-line supplier?
I do mine with vinegar, peppercorns, a clove of garlic & a chilli (both roughly sliced) - which you could leave out if you don't like them too spicy !
(if you dissolve a quarter of a teaspoon of salt & a half a teaspoon of sugar in some of the vinegar, it takes the edge off the strong vinegar flavour too)
