Obviously by their chef / baker.
Forget to say hope you've gotten over from last night's 'illness'.
6 med. size apples, mixed varieties
1 tbsp. lemon juice
1 tsp. cinnamon
1 tsp. nutmeg
3/4 cup. chopped walnuts
3/4 cup. raisins
1 small carton low fat yogurt

Peel, core and chop apples into one inch cubes. Mix with lemon juice (to prevent apples from turning brown). Toss with spices, add walnuts and raisins. Mix with yogurt and serve. Best if made the same day it is to be served. The apples can also be left unpeeled.
Sounds like a traditional Waldorf salad...

Yep, there are loads of Waldorf Salad recipes. I like this one as it has aromatic spices and no celery.
The first Waldorf had just apples,celery......and mayo. Very simple indeed.
