Can you watch one program and record another one that is showing on a different channel with Sky + or can you only record the program that your are watching?

Yes, you can record something else at the same time as watching Sky+.

..but if you record two things at the same time, you can't then watch a third channel.

Above are correct, for info you can watch a recorded program and record 2 other programs at the same time.

you can record 2 channels at the same time and watch a third - as long as it is one of the terrestrial channels thru your aerial.
