Butternut Squash question....

anyone know the nutritional value of this GORGEOUS vegetable?  I love it, and I know it's good for you, but don't really know what vitamins etc are in it.  Thanks!

it is rich in complex carbohydrates..beta carotene..dietary fiber..vitamin c .magnesium.manganese.and potassium..i like making it into soup..it tastes really nice..

I have never tried it!!! What do I do with it when I have bought it?!!

you can treat it like a pumpkin (same family I think). It's very hard to cut so make sure you have a good sharp knife or cleaver, and then remove the seeds.

I think the easiest way to cook it is to cut into wedges with the skin still on and roast in a hot oven, with a drizzle of olive oil and seasoning.

Once cooked, simply scrape away the sweet flesh and chop roughly or mash. Mmmmm!

slice it in half, scoop out the pips. Put a teaspoon of caster suger and a cinnamon stick in the pit where the pips were (on each half). Wrap each half in silver foil and bake in oven for an hour at gas mark 5 (180 degrees)
