Why does the sponge on arctic roll not freeze?

I dont know,but if someone decides to make winter clothes out of it,they're going to make millions!
found this online, i guess it makes sense, my memeory of artic roll is very cold cardboard with icecream and jam in the middle eughhh!


According to spokeswoman for Birds Eye, technically this about the sponge being an open structure of sponge mixture, with whipped-in air. Most of the water evaporates during the sponge-baking process so only a small amount of ice crystals can form. What moisture does remain is combine with the baked sponge, making it soft and pliable so the Arctic Roll doesn't feel frozen solid.
