Fresh Ginger

We bought some fresh ginger a couple of weeks ago, and haven't got round to using it yet, how long will it keep in the fridge? Is there a way of preserving it so it will keep for longer?

Chop it into usable sized chunks,put it in freezer bag,and chuck iti n the freezer.
It will be fine,and is actually easier to grate when frozen!
Or....grate it and put into icecube trays...then freeze.
Or plant it in a pot and keep it indoors. It may take a while, but it'll grow eventually!
Stick it in a pot of soil, place on a warm window sil and grow it !!!!

I have found that it will sprout very nicely if kept in a plastic bag.....have yet to try soil.
The Ginger has a skin and will be useable for several weeks. I do not put it in the fridge or freezer. If you cut a small piece off and the Ginger is darker and still moist, then it is fine to use.
Grate it, put it in a bottle containing some olive-oil, and refrigerate. You could also add grated garlic to the mixture.
