Made this recently with lime juice , double cream and condensed milk and was wondering why it sets. Does anyone know the science behind this? I guess that something happens to the juice and the cream but I would like to know what! Thanks
Someone I was serving it to, asked me why it set. I didn't know and I've been wondering why it sets ever since. It would make more sense to me if the acid in the juice caused the protein to change, but I didn't think that there was much protein in cream.
