Re-heating food

My fella made a massive pan of chilli yesterday morning then we re-heated it at tea time. There is tons left and Im thinking of re-heating some at tea time today. Is it okay to do this?

Its just got mince, braising steak, veg and beans in it.

did you put it in the fridge when it had cooled down coz if so it should be okay dokey :-)

Is it ok to re heat more than once Jane1098? As i thought you should only re -heat meat once after initially cooking it. Or is it ok if you make sure its piping hot...........?

(reading my post it sounds sarcastic but tis not meant to be, i am genuinely asking)
Just re reading the initial question, did you reheat the whole panfull or just re heat portions of it Pixi?

Yeah we re-heated the whole pan of it. It was made in the morning cos we were busy all day then the entire lot heated up for tea. I wasnt sure with it just being beef if it was okay to keep re-heating it.....aww am i gonna have to have pikelets for me tea? :(



Re-heating foods containing onions can be dangerous as they give off a lot of bacteria, but since it has only been re-heated once and kept in the fridge, I'd risk it!
like others have said it's been in the fridge so it's ok to re-heat only whatever you're going to be using. I know the flavour develops in chillies/curries the longer they mature but you would then need to freeze it, if you know it's not all going to be used up.
Jacket potatoes with chili on the menu?
I would definitely reheat it and eat it. I do with most stuff if I have leftovers (which isn't very often)

thanks Sir Alec I didnt know that about onions, will have to try to remember.

hi jack, I couldnt choose between jacket potatoes or chips and the youngan choose chips cos we dont have em often lol When we had it yesterday my fella made small jacket taties and when they were ready he cut them in half, put butter, cheese and chopped up pepperoni on top and back in the oven for 10 mins.....it went really well with the chilli.

Hmm tetjam, you sure you arent fibbing there? lol anyways we dont have tabasco, just jalapenos and fresh chillies :)







You can probably get away with it...but you should heat to 79deg. In a catering kitchen it would NEVER be re-heated a second time. Each time it is heated and cooled the potential is there for the developement of bacteria.

ta pastafreak....well I heated it properly, ate it and enjoyed it and Im still here so I guess it was okay :D

If I go over-board which is usually the case I tend to freeze half whats leftover and eat the non-frozen half the next day.
hot sauce does not kill bacteria .
bacteria thrive on temperatures between 20 -50 centigrade.
they multiply by 2 every ten minutes it only takes 3 hours to get to one million bacteria which is enough to cause food poisoning.when food is heated once it must be cooled down within 90 minutes then refrigerated.
refrigeration does not kill bacteria as some people may think it only puts the bacteria into a dormant stage food has to be reheated to a temperature of 82 0c or 75 0c on the first cook.when reheated to 82 oc most bacteria are killed but there are also spores which are resistant to heat under 121 oc these are only killed in the canning industry.
spores will cause you no harm unless the temp of the food falls below 69 0c.so if anyone wants a sensible answer about food ask someone who knows something about it lol
