if my truck is 4.25 tonnes gross max
what weight could i carry ignoring the train weight

You would have to look at the plate on the truck.

If you unladen weight is say 2200kg and max laden weight is 4500kg then it would be 2300kgs that you can carry....
If it is 4.25 tonnes gvw, you need to take it to a weighbridge and get it weighed, with the driver in it, then take that weight from 4.25.

That's the only way to get it 100% right
The other way to get your "tare" weight (thats the unladen weight) is to check your V5, theownership document. It should be printed on there.
