Anyone have a good recipe for Vegetable soup that does not involve any meat or boiling of bones!!!!! And i like a runny soup with chunks, not a thick blended one. Thanks in advance.

hi nowabit i like this one

diced potatoes
diced carrots
can of chick peas
2 crushed cloves of garlic
some shreded spring cabbage
tin of chopped tomatoes added towards the end off cooking
sounds yum ! the other thing you could do is a cauliflower cheese with added milk to make it runnier but it would be chunky also. (add a few diced potatoes too), maybe even an onion and a few mushers !

My mouth is watering now.

1-2 carrotts, chopped
1/2 a small swede, chopped
1 large onion, chopped
1-2 courgettes, chopped
1-2 tsp chopped garlic
black pepper, a generous shake!
dried mixed herbs,3-4 tsp
2 vegetable stock cubes
tomato puree
a handful of spaghetti broken into small pieces
salt to taste

Put all the ingriedients, (except for the puree and spaghetti) into a large saucepan. Fill with water - to the consistancy you require.
Bring to the boil and then simmer for 20 - 30 minutes.
Check the flavour, adding extra seasoning/stock as required.
Add tomato puree, again to taste and to add colour.
Add spaghetti. Then simmer for a further 10 - 15 minutes.
Cornflour may then be added to thicken soup, if needed simmer for a further 5 minutes.
The soup flavour always improves if left for a few hours prior to serving.

If you want you can add some chopped uncooked bacon at the start and change 1 of the vegetable stock cubes for a ham one.

you can throw anything into a veg soup but its better when you blend them.

I throw in carrots, cauli, leeks, potatoes, broch, into a pan with water, veg stock cub and season with chilli powder, ground corriander, ground cumin and salt and pepper. leave it as it is or blend it all together.
I don't really stick to a particular recipe but make I something similar to cameo's & instead of puree I use a tin of chopped toms. And I never use stock cubes any more since discovering
this
(available in supermarkets)
It's lovely and no extra seasoning is needed!
