Is salami ok beyond its eat by date? Given the amount of preservatives in it, I'm tempted to risk it (5 weeks past)

it depends on the type of date you mean.

If its "best Before" or "Sell Buy" then you should be ok

If its "Use Buy" or "consume buy" or "Eat Buy" then the only place i would put it is in the bin. These dates are the last date that the food processor people garantee that a food is safe to eat. Although there are a large amount of preservatives in salami they will not necessarily prevent all harmful bacteria growth within the meat.
I've eaten salami from a sealed vacuum pack which has been a month out of date but stored in the fridge without any harm. If you go into a delicatessen you will find long tubes of them hanging up in the air at much higher temperatures and probably for much longer. But once the pack is open I'd consume it within 24 hours. You don't say how the salami is packaged so it's your judgement call !
