hi has anybody got a recipe for minestrone soup many thanks tony

get all the vegetables you like and a packet of pasta and tin of chopped tomatoes. put the into a pot and simmer. Good luck. By the way dont forget to season.
.....and don't forget to sprinkle grated Parmesan cheese over the finished soup
No, no, please don't throw everything in together. Fry onions and garlic and celery, maybe some sliced mushrooms for about 10 minutes. Add some chopped carrots and other veg, when depends on how long they take to cook. Cabbage or broccoli is good, then add chopped leeks. Also add some tinned tomatoes or skinned plum tomatoes if they're in season.Now add your stock, enough to ensure the soup's not too thick. Add salt and pepper and herbs (oregano/basil/coriander). When the veg are becoming tender add some small pasta shapes, then a few beans, maybe half a can of black-eye or canneloni beans. Cook gently for another 15 minutes or so. Serve with crusty bread and, as Mrs_overall said, plenty of parmesan.
Look at the recipe in Delia Smith's complete cookery book - works every time and with practice you can start amending it/changing according to the vegetables in season.
It's very long and if you can't find it and you would like it I'll type it out for you - but if you can get hold of Jamie Olivers autumn minestrone soup recipe it's fantastic - makes a massive pan full and is a meal in itself (top with parmesan cheese which melts in)
It will do a good few meals and it freezes well.
Also my kids hate vegetables yet they love this soup even though it's full of them!
