Recipes with cottage cheese?

I love cottage cheese but only ever have it 'raw'. Is it possible to cook it and, if so, does anyone have any recipes? Thanks!

I often make a quiche using a mixture of cottage cheese, mature cheddar and eggs in a pastry case (sometimes adding lightly cooked mushrooms, onions, leeks, etc etc). It puffs up really nicely to give a very light dish. I've also beaten it into cream cheese and used it in baked cheesecakes. I've mixed with peas, cooked potatoes and lots of spices and put teaspoonfuls of the mix in little pastry cases (like samosas) that are baked in the oven.
Hi SRH,

You can use it to make a nice version of macaroni or cauliflower cheese.
Cook the pasta or cauliflower and set aside.
Fry up some sliced onions and mushrooms and season well (I sometimes add a splash of white wine or cider vinegar) Add them to the pasta/cauliflower and add some cheddar cheese. Mix together well.
Mix together the cottage cheese and some milk and pour it over the pasta/cauliflower mix.
Bung it in the oven until it is lovely and bubbly!

Sorry I can't give any measurements or weights but I usually make this when I have leftovers in the house and just put in what I have available! I have also added red peppers, bacon and sweetcorn at the frying stage.
Play around with it to suit yourself.

Cottage Cheese Noodle Casserole

3/4 cup Cottage Cheese
8 oz. (equal to 4 oz. raw) noodles, cooked al dent�
1/4 cup milk (low fat or whole, your preference)
1 Tbsp butter, melted
2 Tbsp chives, chopped
1/2 tsp garlic, minced
Salt and pepper, to taste
1 1/2 Tbsp bread crumbs
Paprika, for topping

Cook the noodles al dente and cool to room temperature.
Place the cooked noodles into a bowl and toss with 1/2 cup of cottage cheese, milk, melted butter, chives, and garlic.

Season this mixture with salt & pepper to taste.
Spray an 8 x 8 inch baking dish with nonstick cooking spray lightly on the bottom and sides.

Place the noodle mixture into this dish and top with the remaining cottage cheese spreading this evenly from end to end.

Top this evenly with breadcrumbs and top this with paprika for color. Spray this lightly with some nonstick spray.

Place this into a 400�F oven for 20 to 30 minutes.

Serving Suggestion: Serve separately in a casserole or as an accompaniment.
Baked Ziti

8 ounces ziti, uncooked
1/2 pound extra lean ground beef
2 medium onions, chopped
3 cups spaghetti sauce
2 cups Cottage Cheese
2 Tbsp grated Parmesan cheese
1 egg, lightly beaten
1 tsp dried parsley
1/2 tsp garlic powder

Preheat oven to 350� F. Spray a 2-quart or 2-liter baking dish with nonstick cooking spray.

Cook ziti according to package directions. Drain, and rinse with cool water. Set aside.

Meanwhile, crumble meat in a large skillet coated with nonstick cooking spray. Add onions. Saut� until meat is cooked. Add spaghetti sauce.

In a large bowl, combine cottage cheese, Parmesan cheese, egg, parsley, and garlic powder. Mix thoroughly. Add cooked ziti and mix well.

Spread about 1/3 of the meat, onion, and spaghetti sauce mixture in the bottom of the prepared pan. Spoon ziti and cheese mixture into the pan.

Pour the remaining spaghetti sauce mixture into the pan. Cover with aluminum foil and bake for about 30 minutes.
Serves 4.

haha Juggles! Ziti is fancy name for macaroni. Use any kind of macaroni with holes so the sauce will go into them, and make the macaroni more tasty. Flat kinds can be used but they will not be as flavourful.

Here's a quick and easy pasta recipe using Cottage Cheese:

1/2 cup cottage cheese
1 cup chopped tomatoes
Plenty of chopped fresh basil
1/2 clove chopped garlic
1 tbsp olive oil

Mix and heat for a few minutes over medium heat till flavours combine, cheese melts a bit, and garlic becomes fragrant. Toss with pasta and top with grated Parmigiana.

Dessert?
Try this:
Cheesecake
2 cups dry curd pressed cottage cheese (fat percentage optional)
3 eggs
1/2 cup yogurt (any percentage of fat)
1/3 cup honey
1 tsp. grated lemon peel
1-2 tsp. vanilla

Preheat oven to 350. Combine ingredients and process until satin smooth. Pour into loaf pan and bake 30 minutes or until edges are slightly browned. Cool and refrigerate for several hours. Top with fresh or cooked drained berries or fruit of choice.

Final idea:

Faux loaded baked potato
1 med. potato
2 strips turkey bacon (Available here in the U.S. at least)
Butter buds or butter spray
1/2 cup lowfat cottage cheese
chives or green onions
salt and pepper

Microwave the turkey bacon according to package directions. As it cools, microwave the medium to larger size potato for 7-8 min. Slice open and mash butter buds, salt and pepper into the flesh. Top with cottage cheese, crumbled turkey bacon and chives.

cheesy tuna pate thingy

1 tub cottage cheese
1 egg beaten
1 tin tuna
2 slices bread grated into breadcrumbs
1 small onion chopped, or spring onions
salt and pepper

optional extras...herbs of your choice , chopped red pepper, handfull of sweetcorn, a sliced tomato

mix everything together,spread into an ovenproof dish (such as a lasagne dish) arrange sliced tomatoes on top, pop in a hot oven for about 30 mins until firm and golden,

eat it hot with salad, chips, jacket pots, or cold with potato salad or spread on toast.... it tastes even nicer the next day

Blend 50 / 50 cottage cheese with Greek yoghurt, and allow to strain overnight through cloth. Add a little orange blossom water (or rose if you prefer) and serve with nuts and honey as a Greek style dessert.
