Help . Just making a batch of lemon curd, it's at the stage where it should thicken and coat the back of a spoon ( over hot water) and it's just not happening . Can I salvage it or is it a case of starting again .I have obviously got an amount wrong somewhere...thanks for any advice..

If you have a microwave try cooking it in there one minute at a time perhaps I haven't made any lately but I used to make it regularly for a local market and although I rarely use my microwave for anything other than re heating or defrosting I found it a much quicker and easier way for this I think I used to cook it for 4-5 minutes but as yours is part cooked already try the above before discarding. If it wont thicken why not use it as a sauce for a pudding or ice cream? good luck

Thanks will try microwave ,husband did suggest that but I said no (whoops) . Sauce sounds good ,it tastes great so will use it as you suggest if it doesn't thicken..Thanks again..
yes...the microwave is a lightening fast way to make lemon curd! just give it 15 - 20 seconds at a time....mix it everytime until it gets thick enough!!
