Has anyone got a fool-proof way of making meringues?
By hand please.

When you have spooned the mixture onto baking tray, cook slowly and leave overnight without opening oven door. This always works for me!
...when worked in a resteraunt we used to "cook "our in the plate warmer on it's lowest setting for 24hrs.... my mother has also dried hers out on a rack above her Aga..... I have a couple of times set the oven to it's lowest setting and left the door ajar to dry them out....

Try going to the website below, I saw BBC chef Phil Vickery makes his meringue in the microwave! I wish you luck. I haven't tried it myself but was impressed by the result on tv
