The stalks are fine to eat, but the leaves are poisonous as they contain a large amount of oxalic acid.
For sure it can be eaten raw but ---as heathfield states-- not the leaves. As children we ate quit a lot raw, usually peeling off the skin. Living in the North just about all allotments would have several crowns of rhubarb and many houses would have one or more crowns in the gardens. We children did not have the money to bealways buying sweets.
As children we ate loads of it, with the end dipped in sugar. Scrummy x x
I used to eat loads as a kid, mind you I always forget the tummy ache it gave me the day afterwards!
