I have seen Wills in wh smith. Are these legal? If you buy one and fill it out, do you have to take it somewhere to be signed by anyone or kept by someone?

They are perfectly valid and legal provided they are signed by two witnesses.

These witnesses do not need to read the will, but just confirm that the signature is yours.

You can keep it anywhere, but should tell the next of kin where it is kept.
Signed IN THE PRESENCE OF 2 witnesses both present at the same time who watched you sign it.
Also note that neither of the two witnesses can be beneficiaries of the will. The executor should be someone that you trust and the will can be kept anywhere as long as it's place of safe keeping is known by those that need to know.
The beneficiaries CAN can be witnesses but will not be able to inherit.
I seriously wouldn't recommend using a fill-in will. there are SO many ptifalls etc in the wording of Wills etc. if you have a lot to bequeath then you don't want to risk contests bby your beneficiaries. Probate law is complex .
