Chicken dish we had in local Chinese

Hiya,
We went out to a local Chinese restaurant last week and one of the starters was strips of chicken that were red-ish in colour and they seemed to be cooked then tossed in sugar crysals and salt. It was gorgeous! Does anyone know what this might have been? I was permitted to go into the kitchen to ask the chef about another chicken dish I liked - minced chicken served in lettuce leaves, but I didn't have the cheek to ask for two recipes!

Food Fairy - I don't think I have ever had the dish you are referring to - but I do know that a lot of times when the meat/chicken looks red on the outside they have used Chinese Bar-b-que Sauce (Char Sui is the name I think) - you might find some of that in an Asian market.
