weight watchers beans on toast (reduced salt thats why they r healthier then beans)

asda do a really good new range of 'go cook' meals for a ok price too, in the fresh section- try the red thai one yum yum :)

precook a homemade lasagne and freeze it and get it out the day you want it and heat in microwave

You're all mad. All the foods you are recommending are **** to be honest. If you want some real decent food ask me.
I cannot see where prepacked stuff can be considered healthy. We had liver with onion and apples ,spring greens,carrots and mash for dinner last night ..not awfully exciting but it took 40 minutes to cook and put on the table.
Invest in a slow cooker ..you can do just about anything in them and will have a hot meal ready with the minimum of effort and you can freeze leftover portions for another time.
It's much cheaper to buy fresh veg and meat than prepacked stuff.Cook in advance and freeze stuff to save time.
If you Google "quick healthy meals "no end of sites and recipes come up.

ok how long are you prepared to spend preparing and cooking a quick healthy meal, and how adept are you in the kitchen? Based on your answer I will provide you with a couple of decent, healthy meals that dont consist of a jacket potato, a ready made meal, or a student type meal like spag Bol. Thank you.
You need a good non stick saucepan for this version of Macaroni cheese:

Boil the macaroni with a chopped onion for about 8 minutes until al dente. Drain & return to the saucepan and stir in a generous quantity of matured cheddar cheese until melted. Serve with tomato slices or some other coloured garnish.
The fastest tomato sauce ever - pour over pasta

A large tomato
Two spring onions
Clove of garlic
Squeeze of tomato puree
Salt
Pepper
Teaspoon of best olive oil
2 to 3 leaves of basil
Half glass white wine

Chop tomato, spring onions and garlic. Tear up basil leaves. Mix in a cup with the tomato puree, olive oil and white wine. Season. Microwave for two minutes. Pour over pasta.

High speed maccaroni

200- 250g dried maccaroni
2 ozs grated cheese, cheddar or parmesan or both
Tomato puree (sundried or normal or mixed.)

Directions:
Cook the pasta as per the instructions. When cooked, turn the heat down low and stirr in the cheese and tomato puree. Serve immediately!

Variations:
This is even better with some other ingredients. Fry or microwave a rasher of bacon, with a small amount of onion, a few thin strips of red pepper, 2 or 3 sliced mushrooms and add at the same time as the cheese and tomato puree. A handful of frozen peas can be thrown in as well.

High Speed Spanish Omelette

1 large or 2 medium spring onions, or a small shallot, peeled and finely chopped
1 small clove of garlic (optional)
2 cold cooked small new potatoes
1 rasher back bacon, trimmed of fat and cut into pieces
0.5 to 1 ozs grated cheese (Emmenthal, Gruyere,Parmesan or Cheddar
2 sliced mushrooms
1 large or 2 small eggs

Directions:
Chop up the onions and garlic, if used. Microwave for 1 minute on high, in an open microwaveable pot, with the lid off.. Add the potates sliced into thin slices, or cubes, the bacon and mushrooms. Microwave for 2 - 3 minutes on high, open. When done, sprinkle on the cheese, salt and pepper to taste. brak the egg (s) over the mixture and scramble with a fork. Put the lid on and microwave for 2 -
Zucchini Oven Frittata

Ingredients

1 cup water
3 tablespoons olive oil
1/2 teaspoon salt
1/2 green bell pepper, seeded and chopped
3 zucchini, cut into 1/2-inch slices
2 cloves garlic cloves, peeled
1 small onion, diced
6 fresh chopped mushrooms
1 tablespoon butter
5 eggs
salt and pepper to taste
1 cup shredded mozzarella cheese
3 tablespoons Parmesan cheese

Prep Time:

10 mins

Cook Time:
20 mins

Ready In:
30 mins

Serves: 5

Directions

1 Preheat oven to 350 degrees F (175 degrees C).

2 In a large skillet or sauce pan, combine water, olive oil, salt, green pepper, zucchini and garlic cloves. Simmer until zucchini is tender, about 5 to 7 minutes.

3 Drain off water and discard garlic. Stir in onion, mushrooms and butter. Cook until onion is transparent. Add eggs and stir; season with salt and pepper. Cook over low heat until eggs are firm.

4 Sprinkle mozzarella cheese over eggs. Bake in preheated oven for 10 minutes. Remove from oven and sprinkle with Parmesan cheese. Place under broiler for 5 minutes. Let stand 5 minutes before cutting into wedges and serving.
