Garlic In Apetina Packs

Does anyone else buy those little Apetina semi circle packs that contain feta, olives and garlic? I want to know how they get the garlic like that, ie it is not really raw or strong but neither is it soft or mushy or seemingly "cooked". Many thanks.

I don't know the specific brand you mean but at a guess I'd say it was pickled as I've often had such as part of tapas or meze.
It's probably the oil that has slightly cooked and softened the garlic - you could try blanching a few cloves and adding to oil in a container to see how it goes.

Yes, you can blanch the garlic cloves and submerge in oil...but (without proper sterilisation) they can only be stored for a few days in the fridge...and never at room temperature. Commercially-produced preserved garlic has all the necessary sterilisation etc.

You can buy peeled cloves in jars in oil.
Yes, mamy, apparently ideal conditions for botulism, if not done correctly.
Yes, I don't use a lot of garlic so I get by with a tube of puree.
I've just hurriedly emptied my garlic oil bottle containing cloves of garlic that I had put in. I did not know they had to be sterilised before.
