Followed the recipe to the letter yet the last few times they've dipped in the middle yet they're cooked right through, I at a loss why this happens
Any ideas?

^^^^ I love ginger - wee bakery near me makes the most beautiful ginger scones - and you know what - stopped making them.
have you changed your self raising flour or raising agent? The two usual causes are either that there is too much raising agent so the cake raises too fast and the cake loses the gas before its set in the middle. The othewr possibility is that the oven door is opened while the agent is working but before the middle of the cake is set but I doubt that you would do that?
Is your oven thermostat working properly? They can go wrong which means the oven is not at the temperature you think it is. Check it with an oven thermometer.
