1) Only keeping single Roman figure out (5) S?L?E. It would seem to be SOL(V)E, but why does V = "single Roman", since V = 5?

2) Top policeman starts to drop off in bar (5) E?T?P. It would seem to be ESTOP (= bar), but can someone parse it for me.

1) V is a single (Roman) figure, as opposed to ML, or something like that.
V is the only single digit Roman numeral, e,g x=10 which is 2 digits
If "figure" is doing double duty, then -

Solve (figure out) - 'sole' (keeping) 'V' (single Roman figure)

(b)Est-(c)op (starts to drop off)
