As vegan son can’t come for Christmas now I have a surplus of veg to do something with.
I was thinking about blanching and freezing the aubergines, but do I need to peel them first? Same with sweet potatoes and courgettes.

I've never peeled aubergines or courgettes so would say no. I would peel the sweet potatoes though.
Can you freeze sweet potatoes? Raw sweet potatoes do not freeze well. Cooked sweet potatoes, however, freeze beautifully. You could roast, boil, or microwave them, mash the flesh, and then mix with a squeeze of lemon to prevent discoloration. Store in airtight containers or heavy-duty freezer bags
Sweet potatoes blanch or they go brown, , courgettes don't freeze very well they lose their crunch, aubergines slice with skins, fast freeze spread on trays before bagging.
Make some soups then freeze them.
Courgette pickle nicely in long slices and go lovely on a cheese plate

I think I’ll Blanche and freeze. My dad will use up the courgettes somehow.
You can make a ratatoile and freeze it according to this recipe.

Don't blanch the aubergines...they will be mush. Dont peel either.
Chop or slice, then roast or fry until just done. Cool and portion in freezer bags. Works for me.
I freeze Aubergines the same as Pasta -spray with olive oil grill both sides leave to cool then freeze in one layer. Once frozen bag up. They are great for using instead of lasagne sheets.
