Battered Fish Going Soggy.

Hello, any idea how to stop battered / breaded fish from going soggy on the bottom? The fish I buy is battered / breaded and chilled not frozen, I put the fish on a hot baking tray but that doesn't work for me - many thanks.

is the oven perhaps not hot enough or you don't cook for long enough? You might also try flipping the fish 10 minutes before the end of cooking time

You could try turning it over half way through.
Buy fish and fry it yourself!

Put in in a frying pan with a little oil for about one minute to crisp up the bottom..THEN pop it into the oven.
I put it on a wire cake tray, the sort you put cakes on to cool, and stand that on a baking tray. Seems to work ok.
I use one of these, helps the air circulate all round. You can usually pick them up in pound and other discount shops so very cheap to give a try.
