Either use lots and lots of parmesan to try to hide the herbiness, or....make another batch without herbs and mix with the original.
Add a potato in large chunks and remove before serving.
Sorry, but what's a potato going to do, exactly?
To back up Ubasses' post (and answer Gingejbee's question):

Ooh! Snap!
Is the meat in with it or just the sauce? If the latter, made it a bigger batch with more tinned tomatoes to spread the herbs out, then save the surplus sauce to freeze if possible.
An extra glass of red wine works wonders - in you of course!
I really don't think that potato will miraculously absorb oregano flavour...now if you'd have said lumps of activated charcoal....
Get over it, I suppose. (Sorry, but I have lost most of my taste buds and hopes in life.) Worse things happen at sea. Being more serious, I suppose that you learn not to overdo the herbs; learn from experience.
Add more tomato, I also blend carrots, courgette and pumpkin also olives into my sauce and freeze in 400 gm bags
Jenny; it's only one meal that wasn't perfect. I can't think of an instant cure to save this dish.

Thanks for answers. I'm going to make a lasagne out of it it was fresh oregano and I normally use dried hence the overuse. I will know next time
I thought dried herbs were stronger than fresh?
Get proper p|ssed... it'll taste great.
I've rescued more than one dish that was over-salty by adding a peeled potato then removing it later on, it tends to absorb the salt, it's not perfect but it's better than chucking food away!
As vagus said...dried are far more concentrated than fresh.

oh oh - well I had some bolognese about 8.30pm LOL. Had added cheese to it earlier and must say it was delicious even tho I'm throwing bouquets at myself LOL

When I go to the trouble of making the sauce (meat included) - when I make lasagne (tomorrow) - there could be about 9 massive servings. Luvely jubbly. Wish you were here!!!
