Cauliflower

I have had delivered a rather large cauliflower and although it's ok it's not at peak freshness.
I can only cope with a small amount of cauliflower at a time.
I wondered - should I blanch it or roast it and freeze it ?
I can make soup with some of it for now. Any suggestions please ?

A mix of cauliflower and broccoli, tossed in oil and sprinkled with salt and ground coriander and then roasted is really tasty.
Cauliflower rice. Whizz in a blender until it looks like couscous. Freeze in portions. Stir fry or steam...add seasonings as desired. After steaming if could also be pureed with garlic and cream...and plenty of black pepper.
