Hmmmm. I do it like you do except I take it off and grill it at the end of cooking.
Lamb shank and various veg, pots and a (bought) yorkie.

When I made them in large numbers I always used beef dripping.
Bacon chops, baked beans and stick to your ribs cheesey mash.
Aunt Bessie does great yorkies
so does Aunt Polly lol!
We are having home grown Jacob x Texel shearling lamb, potatoes dauphinoise, extra fine green beans and baby carrots. I have a bought in dessert, raspberry roulade, with double cream. I've a nice bottle of Jam Shed Shiraz, not to every ones taste but which goes nicely with the lamb, and a bottle of Veuve that was left over from 14th Feb which we may open before dinner.
Ha ha, I bet she does ;)
And please can I come for dinner APG? Beats my bowl of porridge into a cocked hat.
Vagus of course you can come to dinner ,I always make too much food these days as youngest has just gone off to University lol! We're 'flooded in' at the moment -living on a hill no problem with water getting into our house but the bridge at the bottom is up to the top with water and they've closed it - the other bridge is closed to all traffic due to repairs, so if anyone wants to visit us its either a 5 mile hike over the fell or a 30 mile round trip via the A66. You would work up an appetite though lol!
