When "mist" painting new plaster with watered down paint, how do you stop the paint running down your arm?

Use a roller, not a brush. That way, your arm is quickly out of the way of any drips.
...and use the roller on an extension rod.

It'll keep you about 4 feet away from the roller ;o)
...and wear a shower cap...:-)
Or wear overalls and gloves.

I've never misted a newly plastered wall. Just made sure I left it to dry out properly.
Elastic bands around the overall sleeves at the wrists.
Thread handle of paint brush through a circle of foam. Job done
