Dried Sage

Tesco hasn’t had any fresh sage for ages and both of my plants have died. Is there a shortage of the stuff? I really wanted to get the Christmas stuffing done and frozen, do you think dried sage will work? How much would you use?

Dried can be used. Never used fresh so don't know which is stronger in flavour.
Amount would maybe needed to be adjusted as to how much you are making, and what type of stuffing.
I only ever use dried as it is handier for me.
Try a bit and see what happens.

Have you tried Sainsbury's or M and S? They usually have fresh. When I get it, I just leave it to dry. Much nicer than shop bought dried. I'd say you may have to use more, as the flavour...to me anyway...is weaker than fresh.
I have two types of sage in my garden. Common and Purple. Strange. I have always found dried sage stronger.
I think if it's home grown sage dried from fresh, it can be stronger. It's the stuff in the bottles that seem flavour-less to me.
I'm sure you have your own tried and tested recipe but as a guide you can adjust amount of dried sage used ( If fresh is out of the mix) by using the ratio shown in accompanying recipe link.

Thanks for all your answers. I'll probably have to wing it.
I used to make a different exotic stuffing every Christmas. I found it to be very labour intensive and usually the results were nothing to write home about.I did make home made sage and onion stuffing from scratch and have long since decided Paxo is the way to go or Sainsbury's equivalent.
Many fresh herbs in supermarkets come from the Middle East but production has taken a hit this year due to unusually cold weather. e.g. http://rgherbs.com/basil-supply-shortage-rg-rides-the-storm/
