my favourite ever was a cooked hot base with an artickoke sauce on then topped with smoked salmon, cream cheese and rocket.....sublime

Lettuce is nice cooked.
Yes it does but the lettuce was added afterwards so it was cold and crisp with a big blob of mayo in the middle.
But as Ummm says lettuce is lovely cooked or wilted.

Spinach is not that different to lettuce and we cook that all the time. You can make celery soup (yuk) but it is a thing, for weirdos :-)

Lettuce isn't one of them.

To be fair, i was once served a grilled lettuce with a beef burger and i was very disappointed. At the time i though who on earth grills lettuce, it tasted not good.

Cooking is still bound to improve it. For lettuce the ,'orrible bit is about 4% the taste and about 96% the texture. Think about it, no more leafy feeling stuff in your mouth because it's wilted until it's unrecognisable as such. But still easier just to leave it out.
There is a classic French recipe for braised peas with lettuce. It's very nice.
I made it years ago, I should do it again.
